Ingredients
- 1 cup pumpkin puree
- 1/2 cup Honey
- 1/2 cup applesauce or oil
- 2 tbsp flax eggs or 2 eggs 2 flaxseed mixed with 5 water and let sit until gelled
- 1/4 cup water
- 1 tsp baking soda
- 1 tsp baking powder
- 1/2 tsp salt
- 1 tsp cinnamon
- 1 3/4 cup whole wheat flour oat flour or brown rice flour

Instructions
- Combine pumpkin, honey, applesauce or oil, flax or eggs and water. Mix well.
- Add remaining dry ingredients and stir until just combined.
- Fill lined or greased muffin tins and bake at 350 degrees F for 18-20 minutes.
