Each weekend I like to make some sort of snack my boys can enjoy during the week.  I didn’t get to it last weekend and mid week we were wanting a quick, sweet but healthy treat.  And by we I mean me.  I ended up throwing these bars together with what I had on hand expecting a flop, especially since I haven’t been super impressed with garbanzo bean flour.  But they weren’t!  I totally surprised myself with this one.  Be sure to use the almond flour; it gives these bars their cookie quality.  I just wish I had doubled the recipe.

Instructions
  1. Combine dry ingredients (brown rice flour through cinnamon) in a large mixing bowl and stir to combine.  
  2. In a separate bowl, combine flax seed through coconut oil and stir to combine.  
  3. Add wet ingredients to dry and mix (may need to use your hands since batter is thick and somewhat sticky).  
  4. Press batter into parchment lined 9x9 pan and bake at 350 for 20 minutes.  
  5. Cut into bars and enjoy!

My family is totally on to me but JC (8) took one skeptical bite and said “um…these are actually REALLY good”.   I agree.  They are REALLY good.
