Each weekend I like to make some sort of snack my boys can enjoy during the week. I didn’t get to it last weekend and mid week we were wanting a quick, sweet but healthy treat. And by we I mean me. I ended up throwing these bars together with what I had on hand expecting a flop, especially since I haven’t been super impressed with garbanzo bean flour. But they weren’t! I totally surprised myself with this one. Be sure to use the almond flour; it gives these bars their cookie quality. I just wish I had doubled the recipe.

Ingredients
- ¾ cup brown rice flour
- ¾ cup garbanzo bean flour
- ¼ cup almond flour
- 1 tsp baking powder
- ¼ tsp salt
- 1 tsp cinnamon
- 1/3 cup milled flax seed
- ½ cup pure maple syrup
- ¼ cup water
- ¼ cup natural peanut butter
- 1 tsp vanilla
- 1 tbsp coconut oil melted to liquid

Instructions
- Combine dry ingredients (brown rice flour through cinnamon) in a large mixing bowl and stir to combine.
- In a separate bowl, combine flax seed through coconut oil and stir to combine.
- Add wet ingredients to dry and mix (may need to use your hands since batter is thick and somewhat sticky).
- Press batter into parchment lined 9x9 pan and bake at 350 for 20 minutes.
- Cut into bars and enjoy!
My family is totally on to me but JC (8) took one skeptical bite and said “um…these are actually REALLY good”. I agree. They are REALLY good.
