Chocolate Chip Banana Bread Muffins

Ingredients
- 3 tbsp milled flax seed or 3 eggs
- 2 1/2 cups oat flour*
- 1/2 tsp baking powder
- 1 1/2 tsp baking soda
- 1/4 tsp salt
- 1 cup mini dark chocolate chips
- 5 ripe bananas
- 1/4 cup oil recommend coconut oil for the best flavor!*
- 1 tsp vanilla

Instructions
- Preheat oven to 350 degrees F.
- Prepare muffin tins by spraying lightly with cooking spray.
- If using, mix flax seed with 8 tbsp of water and set aside to allow to gel.
- In a large mixing bowl, combine flour, baking powder, baking soda, salt and chocolate chips and stir to mix.
- In a blender, combine banana, oil, vanilla and gelled flax seed mixture or eggs and blend until smooth.
- Pour banana mixture into flour mixture and stir just until combined.
- Pour in muffin tins and cook for 20 minutes.
Makes about 18 medium sized muffins or 12 large muffins.

*Notes: You can grind oats in a food processor or blender to get oat flour. You will also need to melt the coconut oil to liquid if you are using it.
