Yet another pancake...

But not just any pancake.  Yes, I know I post a ton of pancake recipes; my boys love them!  But I had to add another because these might be the best yet.  They are thick, moist and fluffy so I needed to share.  In fact, JC (9) ditched his fork and just picked it up like a big fat piece of bread...

Thick Sunday Morning Pancakes

2 tbsp milled flax seed

5 tbsp water

1 1/2 cups brown rice

1 1/2 cups whole spelt

1 tbsp baking powder

1 tsp salt

1 tsp cinnamon

2 1/2 cups liquid (water or some sort of milk - almond milk, soy milk, etc...)

Combine milled flax seed with water and set aside to gel.  Using a high-powered blender, grind the grains to a flour.  Pour flour into a bowl, add baking powder, salt and cinnamon and mix well.  Add liquid and flax seed and stir to combine.  Pour onto medium hot griddle or pan and flip when top starts to bubble.  

Feel free to use any flour to replace grinding your own grains.  You will need about 3 1/2 cups of flour.  Also, I use a non-stick electric griddle to cook pancakes so I don't need to spray or grease before cooking.  If you don't, you may want to do that so the batter doesn't stick.
