Last week I invited two friends over for dinner. We set the date a week in advance so you would think it would come together smoothly. Anyway, my plan was to make a soup and my peanut butter cookie bars and I needed some things at the grocery store. A few things came up that day, including an unexpected soccer practice for JC (8). Without time for grocery shopping before soccer practice, I planned to stop while he was there and quickly throw a soup together as soon as we got home. Unfortunately Ben (4) fell asleep in the car (which NEVER happens!) and there was no way I was going to wake him up to grab some cauliflower, kale, peanut butter and maple syrup.
Instead I headed home, laid Ben down on my bed for a nap, warned him not to go potty on my bed in his sleep (TMI?), and got creative. The busy day was totally serendipitous because it forced me to create an absolutely amazing soup I would have never otherwise. Just wish I had snapped a picture before we gobbled it up!
Crazy Day Friendship Soup
1 small butternut squash, peeled and chopped
4 cups water
1 head fennel, chopped (I also included the leaves off the fronds)
1 bunch cilantro, chopped
1 bunch celery, chopped
1 15-oz can lentils, drained and rinsed
1 15-oz can garbanzo beans, drained and rinsed
1 1/2 cups frozen corn
1 tbsp dried oregano
1 tbsp dried basil
1 tbsp ground cumin
1/2 tbsp ground ginger
1/2 tbsp dried rosemary
1/2 tbsp salt
Place peeled and chopped butternut squash in steamer and steam until tender. Meanwhile, combine remaining ingredients in large stock pot and bring to a boil. When butternut squash is tender, place in blender and blend until smooth. Add purred squash to stock pot, reduce heat to simmer and simmer uncovered for 30 minutes. Enjoy!
Although the soup was a winner, I had to make the cookie bars with almond butter and honey instead of peanut butter and maple. Stick to the peanut butter and maple.
Good food with good friends...nothing quite like it. Make this soup and eat it with a friend! Especially ones that will help you make sense of a really tough business decision while not caring that your house is a mess. You know who you are! <3
