Savory Quick Bread

I am falling in love with almond flour.  I used to not care much for it, but I am finding it adds a crumbly, moist, sweet consistency and flavor to baked goods.  This newest creation is a savory quick bread that turned out fantastic!  I have eaten this in many ways this week: dunked in chili, spread with almond or peanut butter, dipped in hummus, paired with some steamed vegetables...or eaten while coloring a purple dinosaur.  Because that's how I roll.  This recipe is actually more like a formula; a build your own adventure if you will.  Have fun with it!

Savory Quick Bread

2 cups flour 

1-2 tbsp seasonings

1/2 cup almond flour

1/2 cup flaxseed

2 tsp baking powder

2 cups water

Combine flours through baking powder and stir to combine.  Add water and mix until just combined.  Pour batter into parchment lined 9 x 9 baking dish and bake at 350 for 35 minutes. I cut mine into 8 bars.  


I used 1 cup brown rice flour and 1 cup buckwheat flour, because it needed to be used.  Wheat flour, spelt flour, oat flour, millet flour and quinoa flour would also work well.  For seasonings I used marjoram and caraway seeds because a client just turned me onto them.  But basil, oregano, curry powder, ginger, turmeric, salt, pepper, cinnamon, garlic power, etc... would all be great!  You can customize as you desire.
