I made chocolate chip banana bread this week. Want to see the recipe? I think you do, because it was a winner!
Chocolate Chip Banana Bread Muffins
3 tbsp milled flax seed or 3 eggs
2 1/2 cups oat flour*
1/2 tsp baking powder
1 1/2 tsp baking soda
1/4 tsp salt
1 cup mini dark chocolate chips
5 ripe bananas
1/4 cup oil (recommend coconut oil for the best flavor!*)
1 tsp vanilla
Preheat oven to 350 degrees F. Prepare muffin tins by spraying lightly with cooking spray.
If using, mix flax seed with 8 tbsp of water and set aside to allow to gel. In a large mixing bowl, combine flour, baking powder, baking soda, salt and chocolate chips and stir to mix. In a blender, combine banana, oil, vanilla and gelled flax seed mixture or eggs and blend until smooth. Pour banana mixture into flour mixture and stir just until combined. Pour in muffin tins and cook for 20 minutes. Makes about 18 medium sized muffins or 12 large muffins.

*Notes: You can grind oats in a food processor or blender to get oat flour. You will also need to melt the coconut oil to liquid if you are using it.
