The holidays are upon us! Holiday food can be fun, festive AND healthy. Just take your favorite holiday flavors and seasonal ingredients and combine them with a little creativity! In case you need a little inspiration to get started, I did just that this weekend...
1 cup pumpkin puree
1/2 cup honey
1/2 cup applesauce or oil
2 flax eggs (2 tbsp flaxseed mixed with 5 tbsp water and let sit until gelled) or 2 eggs
1/4 cup water
1 tsp baking soda
1 tsp baking powder
1/2 tsp salt
1 tsp cinnamon
1 3/4 cup whole wheat flour, oat flour or brown rice flour
Combine pumpkin, honey, applesauce or oil, flax or eggs and water. Mix well. Add remaining dry ingredients and stir until just combined. Fill lined or greased muffin tins and bake at 350 degrees F for 18-20 minutes. Makes 12 muffins.
